Servings: 2

Ingredients

  • 1/4 cup chia seeds
  • 1 cup unsweetened soy milk (or your preferred plant-based milk)
  • 1 apple, diced (we love using Honeycrisp or Granny Smith)
  • 1/2 teaspoon ground cinnamon
  • 1 tablespoon maple syrup (adjust to your preferred sweetness)
  • Optional toppings: Sliced apples, chopped nuts, and a sprinkle of cinnamon

Instructions

  1. In a mixing bowl, combine 1/4 cup of chia seeds and 1 cup of unsweetened soy milk. Stir well to evenly distribute the chia seeds. Make sure to stir again after a few minutes to prevent clumping.
  2. Dice 1 apple into small pieces and add it to the chia mixture.
  3. Mix in ½ teaspoon of the ground cinnamon.
  4. Drizzle 1 tablespoon of maple syrup into the mixture, adjusting the amount to your desired level of sweetness. Stir until all the ingredients are combined.
  5. Divide the chia apple mixture evenly between 2 jars or containers with lids. Allow the pudding to set overnight or for a minimum for 4-6 hours. This gives the chia seeds time to absorb the liquid and create a pudding-like consistency.
  6. Once your pudding is fully set, give it a good stir to fluff it up. Adjust the thickness by adding more soy milk if needed.
  7. Add sliced apples or chopped nuts with a sprinkle of extra cinnamon to enhance the flavor and texture.
  8. Enjoy!
